How to double strain a cocktail:

You would normally strain any cocktail by pouring it from the cocktail shaker through a regular strainer into your glass. However, to double strain, pour the cocktail through a regular sieve into a spare glass, then pour the cocktail through a fine mesh sieve into the cocktail glass you are using.

Types of glasses:

Collins glass. A tall, straight glass sometimes referred to as the highball glass. However, the Collins glass is taller and narrower, with a slightly larger capacity, 60ml extra than the highball. The Collins glass keeps your cocktails well chilled and is suited for cocktails which are diluted with plenty of ice and containing more than one mixer.

Coupe glass. An elegant broad, round glass with a long stem, originally designed to serve champagne. The coupe glass is best used for cocktails that require straining but served without ice.

Highball glass. A tall, straight glass designed to be filled with ice and holds between 250ml and 350ml of liquid. The shape of the glass helps to keep the drink cold and is often used to serve cocktails on the rocks. Although the highball glass can be used interchangeably with the Collins glass, the highball glass is slightly shorter and wider than the Collins.

Hurricane glass. A tall glass, featuring a tulip shaped body with a flared rim and a short stem. Ideal for serving tropical cocktails containing several ingredients and mixers.

Margarita glass. A long-stemmed glass featuring a large, round bowl with a broad rim perfect for adding plenty of garnish. The shape of the bowl allows the drinker to enjoy the aroma of the cocktail, and also be able to taste the salt or sugar rim, depending on the cocktail being served.

Martini glass. Arguably, the most recognizable of the cocktail glasses, the martini glass features a V-shaped bowl which sits atop a long stem. Designed for cocktails containing little or no mixers as they need to be sipped. Sometimes referred to as a cocktail glass, the martini glass is less rounded, and slightly larger.

Rocks glass. A short, wide glass with a sturdy base, designed to hold drinks made mostly from spirits and its shape allows for muddling ingredients, stirring, and adding a large cube of ice. Also known as an old fashioned glass or lowball glass.

Zombie glass. The tallest and narrowest of the cocktail glasses, the zombie glass is designed for cocktails containing several mixers, and its shape helps to highlight more colourful cocktails.
