Raspberry Cordial

 300 g Golden caster sugar
 300 ml Water
 2 Lemons, zested and juiced
 450 g Fresh raspberries

Place the sugar, water, lemon zest, lemon juice, and raspberries in a large saucepan.

Simmer until the fruit is falling apart.

Leave too cool for 10 minutes.

Strain the mixture through muslin, then pour into sterilised bottles. Will keep in the fridge for up to 1 month.
